The last time I saw Donnie “Bahama” Wheeler, bartender extraordinaire, he was wearing an eye patch whilst making drinks. Now. here he was pouring rum cocktails at the Havana Club media party at Clough Club.
Sounds a tad like a pirate, no?
But you don’t have to look like, act like or be a pirate in order to enjoy rum, especially not Havana Club 3 Year Old rum. This rum is versatile whether it’s with bitters, soda, or sparkling wine. The Clough Club crew was showcasing it in a Mojito, a Fredo has a Secret, and a Papa Doble at this particular Havana Club party.
Fredo has a Secret was crafted by the bartenders at Clough Club while the Mojito originated in Cuba in the early 19th century and the Papa Doble originated in the early 20th century at the Floridita Bar in Havana. The Papa Doble aka the Hemingway Daiquiri, is a spin on the classic drink made for Ernest Hemingway, American author and journalist, who was diabetic.
To accompany the drinks were Cuban snacks, including a Frita burger, a Panini with pork, mustard and pickle, a deep-fried braised short rib, black beans and rice nugget, crostinis with fresh mint, tomatoes and kale, a plantain crisp with radish, and a dessert phyllo pocket with whip cream, pineapple and mint. I loved all of the food with the exception of the crostini, which paled in comparison to the less healthy appies. The dessert was even described as a “bang in your mouth” and an “oral orgasm” but I preferred the deep-fried braised short rib and the Frita burger. Like a typical Cuban diet there were very little veggies and a lot of pork, beef and starch.
But it wasn’t about the food really, we were there to sample the drinks and see the versatility of the Havana Club 3YO Rum.

Havana Club 3YR, fresh lime juice, honey syrup angostura bitters, the bitter truth grapefruit bitters, sparkling wine
Havana Club 3YR, fresh mint, lime, simple syrup, soda
Havana Club 3YR, maraschino liqueur, pink grapefruit juice, lime juice
It was a gorgeous night to have a crisp beverage on the patio but the vibe in Clough Club with Cuban music, salsa dancing and good people was also enticing.
I spent most of the night mingling with those I had met before while meeting a few new people and of course taking a whack load of photos between multiple drinks. I left the event with a smile on my face and a slightly staggered walk.
